Pecan Banana Bread

Are you even human if you don't like banana bread? Cole's mom makes the BEST baked goods and Cole is especially obsessed with her banana bread. I wanted to create a clean version of our favorite snack so I could devour the loaf guilt free! haha This recipe is refined sugar free, made with whole wheat flour and delicious! Enjoy friends!


Ingredients

  • 1 cup mashed ripe bananas

  • 1/3 cup coconut oil (melted)

  • 1/2 cup honey or pure maple syrup 

  • 2 eggs

  • 1/4 cup almond milk 

  • 1 tsp vanilla 

  • 3/4 cup chopped pecans

  • 1 3/4 cup whole wheat flour 

  • 1 tsp baking soda

  • sprinkle of sea salt

  • 1/2 tsp cinnamon 


Directions

  1. Preheat the oven to 325 degrees F.

  2. Grease a 9 x 5 loaf pan.

  3. In a large bowl combine all dry ingredients ( pecans, whole wheat flour, 1 tsp baking soda, sea salt and cinnamon)

  4. Add in wet ingredients (mashed banana, coconut oil, honey, almond milk , and vanilla). 

  5. Pour the batter into the pan and bake for 1 hour. Cool for 15 minutes before slicing. 

  6. Enjoy and share with your friends!
