Healthy Peppermint Bark
Who else absolutely cannot wait for Christmas?! I have been feeling especially excited this year and reinventing some of my favorite holiday treats. One of my all time favorite dessert is peppermint bark, but I had never made it on my own before! I wanted to do a healthier version of the treat so I used cacoa power and coconut oil. I chose to top mine with white chocolate, candy canes, chocolate chips, almonds and sea salt. It was the perfect mix of salty and sweet.
I make a variation of this salad almost every day for an easy weekday lunch! Make the dressing in batches to save you time making lunch everyday. I topped mine with roasted pecans, almonds, avocado, cucumbers, tomatoes, red onion, feta cheese, hemp hearts and tossed with lemon dressing. Add whatever you would like to the salad!
Ingredients:
1 cup cocao powder
1 cup coconut oil
1/4 cup honey (or maple syrup)
1 tsp vanilla
pinch of salt
1 cup of white chocolate chips (melted)
1/4 cup crushed candy canes
1/4 cup chopped almonds
1/4 cup dark chocolate chips
Directions:
Mix together cocao powder, coconut oil, honey, vanilla and a pinch of salt. Line a shallow baking sheet with parchment paper and pour the chocolate mixture into the sheet. Place the baking sheet into the freezer for 30 minutes (coconut oil freezes quickly) until solid.
Melt white chocolate and pour over frozen cacao mixture (not too hot or the coconut oil will melt). Chop almonds and sprinkle over the white chocolate. Crush the candy canes and sprinkle over mixture with the chocolate chips.
Place int he freezer for 30 minutes to 1 hour until fully frozen.
Cut into chunks and serve.
