Crockpot Chicken Tortilla Soup
I am so excited to share this healthy, EASY, and delicious crockpot tortilla soup recipe! I made this a couple days ago when I was running out the door for work and realized that I had nothing planned for dinner. I looked through our fridge and thought up this quick recipe. I am not lying it took me 10 minutes!! Most of the ingredients are canned and super cheap, so this meal is also great on a budget. I love to use the crockpot because it is insanely easy and it makes the chicken juicy. The soup taste amazing without sour cream and cheese, but feel free to add it. Basically you just throw all of the ingredients in the crockpot and you come home to an amazing meal! It feels like someone else made dinner for you!
I like to top mine with fresh lime juice, cilantro, avocado and crushed tortilla chips!
Ingredients:
2 Chicken breast
1 can black beans (drained and rinsed)
1 can corn (drained and rinsed)
1 can diced tomatoes
1/2 onion (diced)
5 cups organic chicken broth
1 Tbs. garlic (minced)
1 tsp. chilli powder
1 tsp. paprika
salt and pepper (to taste)
Toppings (Optional) :
2 limes
1/4 cup cilantro
tortilla chips
avocado
cheese (optional)
sour cream (optional)
Directions:
Pour chicken broth into the crockpot. Add diced tomatoes, corn, black beans, onion, garlic, paprika, chili powder, salt and pepper. Add chicken breast and cover with lid.
Cook on low heat for 6 hours or high heat for 4 hours, or until chicken is throughly cooked.
Remove the chicken from the slow cooker and shred, then add back into the crock pot and stir.
Squeeze lime juice to taste and serve with cilantro, avocado, and tortillas (or with other optional ingredients).
