Carne Asada Tacos

Taco Tuesday is taken seriously around our house! We do not mess around when it comes to tacos. If there was only one type of food that I could eat for the rest of my life it would 100% be Mexican food! Not be sound dramatic, but if this meal was my last meal on earth I would not be mad for a second. For me, the flavor is allll in the salsa! If you have a crappy salsa, then your meal taste crappy. I like to season my meat minimally, then pack the flavor into the toppings! I loveee the taste of the carne asada, but I also ate several vegan tacos that blew me away. I did uncooked corn tortillas, roasted peppers ,guacamole,  red salsa, mango salsa, organic pinto beans, lime and cilantro. They make awesome leftovers that can be enjoyed throughout the week!

Ingredients For the carne asada: 

  • 2  (1 Pound) flank steaks

  • 2 limes, juiced

  • 4 cloves garlic, minced

  • 2 tsp cumin

  • 1/2 tsp salt

  •  1/4 tsp black pepper

  •  2 Tbs olive oil or avacado oil

Toppings:

  • Fajita peppers

  • Mango Salsa

  • Homade red salsa

  • Corn tortillas

  • organic refried pinto beans

  • 2 limes (cut into sections)

  • 1/2 cup of cilantro 

  • Homemade guacamole


Directions:

  1. Drizzle 1Tbs of oil over both sides of the steak and season with salt, pepper, cumin, and garlic. Let the steak rest until at room temperature (about 20-30 minutes). 

  2. If grilling, set the grill to high heat and cook the steak for 5-7 minutes per side (or until cooked to liking). 

  3. If pan searing, drizzle 1 tsp of oil and set he temperature to meduim- high heat. Cook for 4-5 minutes per side ( or until cooked to liking). 

  4. Let the steak rest and squeeze the juice of one lime on top of the steak. Dice the steak into small cubes and serve on top of tacos. Serve in a corn tortilla with guacamole, salsa, cilantro, lime, peppers, and beans.
